Actually, the chocolate consists of many different crystals, and when we melt chocolate we cause those crystals to become all chaotic and mismatched.
So, what we’re gonna do when chocolate’s otherwise perfect state that we once knew it, is now imperfect after melting?
Well, firstly, we just have to get it back there as it cools to ensure our finished products do not have a grainy, dull texture, they are not soft and will never set, or they can be dry and crispy, almost like dirt in your mouth! That’s definitely not a way to go!

Manhattan cookie shop Levain Bakery opens Bethesda outpost
Friends Pam Weekes and Connie McDonald started Levain as a small bread bakery, but it is their palm-sized, six-ounce chocolate chip cookies that put them on the map with lines outside the door routinely. The pair have appeared on just about every “Best of New York” list.
For the grand opening, featured the following flavors

Cookies is a unique style, open bakery–meaning you can see the cookies being made right in front of you. How cool is that? And each week, there is something new. has over 200 cookie flavors, which rotates each week, but chocolate chip and chilled sugar cookies are always available.

Dave described the quarter-pound cookies “the size of your head” with a homemade, comfort food feel. Kinds of cookies include everything from a normal chocolate chip to s’mores, turtle and gluten-free and keto cookies. The shop will also serve edible cookie dough, ice cream sandwiches and ice cream mixers.
